Favorite Vegan Breakfast & Brunch Recipes ☀️ From perfect pancakes to the best breakfast burritos, here are our top 20 picks for the most delicious plant-based dishes to enjoy at the beginning (or end) of your day!

Mornings can be hectic. Whether you're getting kids off to school, rushing out the door to beat the commuter traffic, or simply logging on from your home office, it's sometimes easy to overlook your first meal of the day.
When I'm short on time, I'll often whip up a quick smoothie in my blender or make avocado toast. Sometimes I'll grab an oatmeal cookie or two to enjoy with a cup of coffee, or nibble on a slice of my favorite vegan pumpkin bread.

What do you have for breakfast? It may come as no surprise that one of the top breakfast foods is oatmeal. A bowl of hot (or cold depending on your tastes) oats has been a favorite way to begin the day for generations. In fact, my 107-year-old cousin enjoyed a bowl of oatmeal every morning, most of his life.
There's good reason so many people love to start their day with oatmeal. It's loaded with nutrition and fiber, is satisfying & filling, and it's the perfect foundation for a build-your-own breakfast bowl. Whether you prefer old fashioned, steel cut, or microwaveable quick-cook, a bowl of oatmeal can be as simple or as exciting as you want to make it!

- Fresh fruit - chopped apples, pears, berries, mango, or bananas
- Dried fruit - cranberries, cherries, raisins, dates, apricots

- Seeds - pumpkin, sunflower, chia, hemp
- Coconut - flaked

Weekend brunches are my favorite meals. I almost always make a batch of tofu scramble with lots of toppings, a pan of hash brown or roasted potatoes, toast, bagels or muffins, and fresh fruit.
How about breakfast for dinner? It's fun to mix it up sometimes. My kids loved it when I would announce we were having a "silly dinner night", which usually meant pancakes or waffles. Lately I find myself making my favorite vegan California breakfast burritos for dinner, a lot. They're quick & easy to prepare and super satisfying.
