For the shortbread crust

All-purpose flour - Provides the structure for the shortbread. Measure the flour carefully so the crust stays tender rather than dry or dense.
Powdered sugar - Gives the crust a delicate texture and light sweetness. Unlike granulated sugar, it blends smoothly into the dough and helps create that melt-in-your-mouth shortbread texture.
Vegan butter - Provides the rich flavor and tender texture we expect from shortbread. I often use Earth Balance Buttery Spread with good results. Stick-style vegan butter also works well and makes measuring by tablespoons especially convenient if you don't own a kitchen scale.
Salt - Balances the sweetness and enhances the flavor of the crust.
For the lemon filling

Fresh lemon juice - Freshly squeezed juice provides the tart, unmistakable lemon flavor at the heart of this recipe. I wouldn't substitute bottled lemon juice here.
Lemon zest - You'll only need a small amount. Zest the lemons before squeezing them for juice.
Granulated sugar - Sweetens the filling and balances the natural acidity of the lemon juice.
Cornstarch - This is our primary thickener. It allows the lemon filling to set without eggs while maintaining a smooth, custard-like consistency.
Plant-based milk - I use plain, unsweetened cashew milk for its creamy texture and neutral flavor. Soy milk is another good option. Choose a creamy, pale-colored milk to preserve the filling's sunny yellow hue. Thin varieties, such as rice milk, may produce a softer consistency. Coconut milk can provide good creaminess, but its flavor may come through in the finished bars.
Vegan butter - Stirred into the filling after cooking, rather than cooked with the other ingredients. This small addition gives the filling richness and contributes to its silky texture.
Turmeric - Just a tiny amount enhances the natural yellow color. Less is definitely more here. You can omit it if you prefer.

How to make classic vegan lemon bars
These bars require several steps, including baking, stovetop cooking, cooling, and chilling. Give yourself enough time to let each stage do its job.
1. Prepare the pan

Preheat the oven to 350℉. Line an 8 x 8-inch baking dish or pan with parchment paper. Leave enough parchment extending over the sides to create handles. You'll use them later to lift the chilled bars from the pan.
2. Make the shortbread crust


Combine the flour, powdered sugar, and salt.
Gradually add the dry ingredients to the melted vegan butter and mix until a soft dough forms.

Try not to overwork it. The dough will be thick and maybe a bit crumbly.

Using your hands, an angled spatula, or mini rolling pin, press the dough evenly into the parchment-lined baking pan. Make sure the corners and edges have an even layer of crust. Use a fork to poke a few holes in the crust. This technique, called docking, allows steam to escape while baking.
3. Pre-bake the crust
Bake at 350℉ until the surface looks dry and the edges are lightly golden. This usually takes about 18-20 minutes. The crust should be fully pre-baked before adding the lemon filling.
4. Make the lemon filling

In a medium saucepan, whisk the sugar, cornstarch, and turmeric together before adding the other ingredients. This helps prevent lumps. Next, add the milk, lemon juice, and zest. Stir until fully combined.

Place the saucepan over medium-low heat and whisk continuously as the filling heats. Continue whisking as it begins to bubble and thicken. This usually takes about 3-5 minutes. The finished filling should resemble a soft, pourable pudding.

Remove the saucepan from the heat. Whisk in the cold butter, about one tablespoon at a time, until fully melted and incorporated.

Pour the warm lemon filling over the warm pre-baked crust. Spread it evenly to the edges and corners.
5. Final baking
Return the pan to the oven and bake another 12-15 minutes at 350℉. Remove from the oven when the filling is firm around the edges, glossy on top, and slightly soft in the middle.
6. Cool and chill

Allow the bars to cool completely before refrigerating. Chill thoroughly before removing from the pan. Refrigerate for at least 4 hours, or preferably overnight. The filling will set firmer as it cools.

Lift the chilled slab from the pan using the parchment paper. Cut into squares or rectangles with a sharp knife. Finish with a light dusting of powdered sugar just before serving.
Expert tips for the best vegan lemon bars
Use fresh lemons. Freshly squeezed juice gives the filling its clean, distinctive flavor. Bottled juice won't provide the same result.
Measure the cornstarch carefully. Cornstarch determines how firmly the filling sets. Too little can leave it soft. Too much can create a gummy texture.
Don't overdo the zest. Zest only the thin yellow peel, avoiding the bitter white pith underneath. A microplane makes quick work of finely zesting lemons.
Keep whisking. Whisk the filling continuously as it cooks to prevent lumps and scorching. Pay attention to the bottom and corners of the saucepan.
Watch the filling, not just the clock. It should become smooth and noticeably thick before you remove it from the heat.

Refrigerating
Store lemon bars covered in the refrigerator for 3-5 days. They're best enjoyed within the first three days. After three days, the shortbread gradually absorbs moisture from the filling. The bars are still good, but the crust will begin to soften.
Freezing
Cut the chilled lemon bars into individual squares before freezing. Place them in a covered freezer-safe container or freezer bags. Thaw the bars in the refrigerator before serving. Add the powdered sugar after thawing for the best appearance.
Serving
Serve the bars chilled. The filling softens as it warms, so don't leave them at room temperature for extended periods. For clean squares, cut the bars while they're cold. Use a sharp knife and wipe the blade between cuts.

Transport lemon bars chilled in a covered container. It's best to place the container in an insulated cooler with ice packs. Keep them out of direct sunlight and hot cars. Excessive heat can soften the filling considerably.
