- Gather your ingredients.

4. Squeeze the juice from the lemons.

5. Pour the sugar, lemon juice, zest, and Just Egg into a sauce pan. Stir to combine. Add the butter. Place the pan over medium heat. Using a whisk or silicone spatula, stir occasionally until the mixture begins to bubble and thicken. Stir continuously until the lemon curd is a smooth and spreadable consistency you like.

6. Remove the sauce pan from the heat and allow the lemon curd to cool. It will continue to thicken as it cools.

7. Transfer the curd to a mason jar or food safe airtight container.

8. Cover and store refrigerated up to a week.

- 4 qt sauce pan
Ingredients
- ¾ cup lemon juice fresh
- 1 tablespoon lemon zest fresh
- ¾ cup granulated sugar white sugar
- ¼ cup vegan butter
- ¾ cup Just Egg egg replacer
Instructions
- Rinse lemons and let dry.
- Use a citrus zester or microplane to grate the zest from the lemon peels.
- Squeeze juice from lemons.
- Place the sugar, lemon juice, zest, and Just Egg into a sauce pan. Stir to combine. Add the butter.
- Place on a stovetop over medium heat. Stir occasionally until the lemon curd begins to bubble and starts to thicken. At this point, stir continuously just until the curd becomes a smooth and spreadable consistency you like. Don't overcook or the curd could become grainy.
- Remove the pan from the heat and allow the curd to cool. The curd will continue to thicken as it cools.
- Transfer the lemon curd into a clean jar or food-safe airtight container. Store refrigerated up to one week.
