Soup is soul food. Nothing is quite so satisfying and comforting as delicious homemade soup. When the weather gets chilly, a nice warm bowl of soup is what I want in front of me. The aroma of a pot of my favorite rustic vegetable soup simmering on the stove puts me in a happy space.
During cold and flu season, a bowl of citrusy and lightly spicy Tom Yum soup with tofu is just what the doctor ordered. When the outdoor temperature heats up, I cool down with icy cold gazpacho or this refreshing and creamy chilled cucumber avocado soup. I don't know which I love the most.

With a few basic tools and ingredients on hand you can make soup anytime!
Basic Tools
I use the same few pieces of kitchen equipment every time I make a batch of soup. Here are my go-to tools:
- A deep pot with lid (I use a 4 quart cast iron dutch oven for small batches and an 8 quart stainless steel soup pot for large batches (because it is lighter for me to handle).
- Large cutting board
- Paring knife
- Chef's knife
- Vegetable brush
- Vegetable peeler
- Strainer/colander
- A long handled spoon for stirring
Basic Soup Ingredients

The first items on my list - onion, carrots, and celery create the flavor foundation for limitless dishes. When cooked slowly or sautéed in a small amount of oil, also known as "mirepoix" (pronounced meer-pwah) this simple vegetable base is the beginning of many memorable and delicious soups, stews, and sauces. From there, you can build you soup with ingredients like:
- Onion
- Carrots
- Celery
- Vegetable broth and bouillon
- Garlic - fresh or powder
- Canned tomatoes
- Canned beans - kidney beans, white beans, chickpeas, etc.
- Frozen peas and other veggies
- Small pasta like orzo, ditalini, shells
- Lemons and limes - fresh or bottle juice
Creating a batch of soup is a lot like throwing together a salad. You can get creative with the ingredients you have on hand and end up with something tasty and satisfying. There really aren't many rules to follow. I can't tell you how many surprisingly good improvised meals we have enjoyed simply by using up a few items from the fridge or pantry.
