Before their San Diego locations closed in 2023, I asked an employee what was in it, so they shared the ingredients with me. Naturally, I had to recreate it!

It’s everything you love about key lime pie, but in a lighter, spoonable form that feels both elegant and effortless.
One of the best things about this dessert (aside from how delicious it is) is how incredibly easy it is to make. You don’t need to bake a thing, and with just four basic ingredients - key lime, silken tofu, agave nectar, and crumbled vegan cookies or granola - you can have your parfaits ready to serve in minutes. Ingredient Notes

This recipe is so quick and easy to prepare - all you need are 4 ingredients - that’s it! In fact, there's no baking required, unless you decide to make your own homemade oatmeal crumble (I’ve included the recipe below).
- Key Limes - Fresh key lime juice gives this dessert its signature tart, citrusy zing. You can also use regular limes in a pinch - just know the flavor will be slightly less intense.
- Silken Tofu - This is the secret to that smooth, creamy texture without any dairy. It has a neutral flavor that lets the lime shine, and it’s packed with plant-based protein. Try to find a brand that isn't packed in water - like this one. Otherwise, you should drain the water from the tofu before using.
- Agave Nectar - Adds just the right amount of sweetness with a light, subtle taste. It blends beautifully with citrus without being overpowering.
- Cookie Crumbles - Vegan oatmeal cookies, Biscoff, or Speculoos add that crave-worthy chewy crunch. Choose your favorite, or try crushed graham crackers or granola for a twist.
How to make vegan key lime parfaits
Step one - Make the filling

- Grate the lime zest and squeeze juice. Drain the tofu if it is packed in water.

2. Place the key lime juice, zest, tofu, and agave nectar into a blender. Run on high speed until smooth and creamy.
NOTE: Transfer the filling to a covered container and refrigerate until ready to assemble the parfaits.
Step 2 - Prepare the crumble

If you are using cookies - crush them into small chunky crumbs with a rolling pin or crunch them up with your hands.

Step 3 - Assemble the key lime parfaits

- Gather your key lime filling, zest, cookie crumbles, a spoon and a few small glass cups or bowls.

- ½ cup old-fashioned oats - Rolled oats give the crumble a hearty, chewy texture and hold up well when baked. Avoid quick cook oats - they’ll break down too much and lose that signature crunch.
- ½ cup vegan brown sugar - Adds rich, caramel-like sweetness that complements the lime beautifully. Be sure to use certified vegan brown sugar, as some brands process with bone char.
- ½ cup all-purpose flour - A bit of flour helps bind the crumble and gives it structure. You can also use whole wheat pastry flour or a 1:1 gluten-free blend if needed.
- ¼ cup vegan butter - Creates that golden, buttery crispness we all love in a crumble.
Instructions
- Preheat oven at 350°F

2. Place the oatmeal, brown sugar, and flour into a mixing bowl. Stir to combine.

3. Using a pastry cutter or fork, cut the butter into the oats, flour, and sugar.

4. Once the ingredients look crumbly, it's ready to be toasted in the oven.

5. Line a cookie sheet with parchment paper. Spread the crumble evenly on the pan. Bake at 350°F for 8 minutes. Use a flat spatula to turn the crumble over. Continue baking until the crumble looks toasty golden brown.

Quick and Easy Vegan Key Lime Parfaits
Equipment
- 1 blender
- 1 zester or microplane
- 8 small clear cups or bowls
Ingredients
- ¼ cup key lime juice approximately 5 limes
- ½ teaspoon key lime zest
- ¼ cup agave nectar
- 14 oz silken tofu one package - drained if packed in liquid
- 8.8 oz Biscoff cookies one package
Instructions
Key Lime Filling
- Place lime juice, zest, agave nectar, and tofu into a blender.

Cookie Crumble

Assembling the Parfaits
- Spoon some of the cookie crumbles into the bottoms of small clear cups or bowls.
- Add a few spoonfuls of the key lime filling onto the crumble.
- Repeat with additional layers if you like.
