Like the name suggests, a quick bread is just that - a leavened flour-based loaf that does not require yeast or additional time for rising/proofing in order for the bread to increase in volume. Instead of using yeast to rise, they use baking powder or baking soda to make them light and fluffy. Quick breads rise while baking, much like cakes and muffins.
What's the difference between muffins and quick breads?
Muffins and quick breads are made almost the same way, same ingredients and mixing method. The only difference? Shape and baking time! Muffins are baked in a muffin tin, quick breads are baked in a loaf pan, so muffins cook faster since they have more surface area.
Can you turn a quick bread recipe into muffins?
Yes! Most quick bread recipes can be adapted into muffins by adjusting the baking time and sometimes the temperature. It’s all about size, time and temperature—otherwise they are pretty much the same!
Quick Breads (Loaves): Baked in loaf pans, they take longer to cook since the batter is deeper and denser. Loaves typically bake at a lower temperature (350°F) for a longer time (45–60 minutes).
Muffins: Baked in muffin tins, they cook faster since they are smaller and have more surface area. Muffins usually bake at a higher temperature (375°F–400°F) for a shorter time (20–30 minutes).

All-purpose white flour has a shelf life of about 3-8 months. Gluten-free and whole wheat flours may become stale sooner. Unless you bake a lot, it's better to purchase flour in small quantities. Baking powder can lose its rising oomph after a few months. I like to keep an extra unopened container on hand just in case.
Measure accurately
Baking is equal parts science and art. Unlike some cooking methods where you can guess-timate quantities by adding a handful of this or a pinch of that, too much or too little of an ingredient can mean the difference between ooh and aah or uh-oh. Pre-measuring your ingredients with everything prepped in advance can be a game-changer.
A digital kitchen scale is a home cook's best friend. I had no idea how helpful they are, particularly for baking, until I got one.
