I admit, I'm a bit impatient by nature, so I just love it when I can whip together a wonderful recipe that requires few ingredients and not a lot of time. I'm almost embarrassed about how simple this recipe is, but that's what makes it so great. A couple basic ingredients & you have dessert!
Vegan Very Berry Mousse
This light berry mousse recipe is so simple, it takes about a minute to prepare.
- One 5.3 oz carton strawberry or raspberry non-dairy yogurt
- One 9 oz carton non-dairy whipped topping - thawed (I love So Delicious Coco Whip)
- Fresh berries (for garnish)
- A few springs of fresh mint
- Tea cookies or mini Palmiers - see recipe below or full recipe here.
- In a medium bowl, fold together yogurt with whipped topping.
- Spoon into small bowls.
- Garnish with berries, mint, and a cookie.
- Serve with a smile.
- I know . . . It's just that easy!
How to make vegan palmier heart pastries

Palmier Pastries

- One pkg refrigerated puff pastry
- One C granulated sugar
- ¼ teaspoon salt
- Preheat oven to 450º.
- Spread sugar and salt out onto a large silicone rolling mat or cutting board.
- Open up puff pastry and place pastry on sugar. Cut dough in half.
- Using a rolling pin, roll out pastry dough on top of sugar, rolling up/down and side/side.
- Turn dough over continue rolling in both directions, until about 14"x14". Repeat with other half of dough.
- Make sure both sides of dough are evenly coated with sugar.
- Take dough squares and fold each side toward center.
- Fold again into long narrow rectangle.
- Cut (crosswise) into ½" pieces.
- Unfold pieces into heart shapes and place on non-stick baking sheet or Silpat.
- Bake at 450º for 3-4 minutes, turn over, and continue baking Palmiers for approx. 2 minutes or until golden brown and caramelized.
