    Vegan Very Berry Mousse ❤️ Share the love with this simply light & luscious dessert paired with crispy caramelized mini heart-shaped palmier pastries.

    This is one of those fabulous quick & easy creations that will wow your guests. It's also the perfect, light 'something sweet' to enjoy with your special someone after a romantic meal. ❤️ Paired with our petite Vegan Heart Palmier Pastries, this is an after dinner treat to remember!

    I admit, I'm a bit impatient by nature, so I just love it when I can whip together a wonderful recipe that requires few ingredients and not a lot of time. I'm almost embarrassed about how simple this recipe is, but that's what makes it so great. A couple basic ingredients & you have dessert!

    Vegan Very Berry Mousse

    This light berry mousse recipe is so simple, it takes about a minute to prepare.

    • One 5.3 oz carton strawberry or raspberry non-dairy yogurt
    • One 9 oz carton non-dairy whipped topping - thawed (I love So Delicious Coco Whip)
    • Fresh berries (for garnish)
    • A few springs of fresh mint
    • Tea cookies or mini Palmiers - see recipe below or full recipe here.
    1. In a medium bowl, fold together yogurt with whipped topping.
    2. Spoon into small bowls.
    3. Garnish with berries, mint, and a cookie.
    4. Serve with a smile.
    5. I know . . . It's just that easy!

    Palmier Pastries

    • One pkg refrigerated puff pastry
    • One C granulated sugar
    • ¼ teaspoon salt
    1. Preheat oven to 450º.
    2. Spread sugar and salt out onto a large silicone rolling mat or cutting board.
    3. Open up puff pastry and place pastry on sugar. Cut dough in half.
    4. Using a rolling pin, roll out pastry dough on top of sugar, rolling up/down and side/side.
    5. Turn dough over continue rolling in both directions, until about 14"x14". Repeat with other half of dough.
    6. Make sure both sides of dough are evenly coated with sugar.
    7. Take dough squares and fold each side toward center.
    8. Fold again into long narrow rectangle.
    9. Cut (crosswise) into ½" pieces.
    10. Unfold pieces into heart shapes and place on non-stick baking sheet or Silpat.
    11. Bake at 450º for 3-4 minutes, turn over, and continue baking Palmiers for approx. 2 minutes or until golden brown and caramelized.

    • small bowls or ramekins for serving

    Ingredients
     
     

    • 1 5.3 oz carton vegan yogurt strawberry or raspberry
    • 1 9 oz carton non-dairy whipped topping thawed (I love So Delicious Coco Whip)
    • 1 C fresh berries strawberries and raspberries - for garnish
    • ¼ C fresh mint leaves for garnish

    Instructions
     

    • In a medium bowl, fold together yogurt with whipped topping.
    • Spoon into small bowls.
    • Garnish with berries, mint, and a cookie. Serve with a smile.❤️

    Notes

    🥕For a romantic dessert, create hearts with your strawberries. Simply slice berries in half. Cut a "v" in the top at the stem ❤️
