A Personal Note From Connie
One of the biggest challenges I faced when I stopped eating animal-based foods was figuring out what to serve our non-vegan family and friends. My husband John and I have always loved entertaining, and most of our friends aren't vegan. We knew we could create delicious, satisfying food everyone would enjoy.

Over the years, we veganized many of our favorite dishes, including mac and cheese, chili, street tacos, and meatballs.

With help from John and our daughter Madi, we recreated many of our favorite holiday dishes, including cranberry cheese bites, cheese fondue, and old-fashioned applesauce cake, keeping the flavors, textures, and presentation we loved while making them vegan.

Those gatherings taught me something that eventually became the inspiration for this cookbook. When you're feeding a mixed crowd, not everyone may eat meat, dairy, or eggs, but everyone can enjoy delicious vegan food.
About the Author
Connie Edwards McGaughy is a vegan recipe developer, cookbook author, and founder of The Carrot Underground. Her journey toward vegan living began in 1977, and her recipes focus on recreating familiar comfort foods without animal products.
