A Personal Note From Connie
Some of my favorite memories are connected to baking. Cakes for birthdays, pies for holidays, cookies shared with friends, and family recipes passed from one generation to the next.

When I stopped using eggs and dairy, I didn't want to leave those traditions behind. I wanted to learn how to recreate classic desserts like devil's food cake so they still looked, tasted, and felt like the recipes I remembered.
Over the years, I've learned that successful vegan baking isn't simply about leaving ingredients out. Understanding what eggs, butter, and dairy do in a recipe makes it much easier to choose the right replacements and get the results you're looking for.

Recipes like my raspberry white chocolate muffins are a good example of how the right ingredients and techniques can create the flavors and textures we expect from traditional baking.

That's what inspired Volume Two. I wanted to bring together beloved recipes, like my all-time favorite lemon meringue pie, with the practical baking knowledge I've gained along the way, so you can create desserts worth celebrating and sharing.

Connie Edwards McGaughy is a vegan recipe developer, cookbook author, and founder of The Carrot Underground. Her journey toward vegan living began in 1977, and her recipes focus on recreating familiar comfort foods without animal products.
