Vegan Thanksgiving Leftover Sandwich 🌱 Enjoy the best sandwiches of the year made from all your favorite Thanksgiving dinner leftovers!

Let’s be honest – preparing a Thanksgiving dinner can take a lot of effort and time. Hours of shopping, preparation and cooking only to be followed by a major kitchen clean-up. The reward, of course, is enjoying the delicious dishes you’ve prepared and the accolades from your family and/or guests. For me, a big part of the fun of cooking all that food is enjoying the leftovers during the next couple days. I love being able to just relax and reheat a dish of vegan stuffing or yams.

When I was a kid, my dad’s favorite way to enjoy Thanksgiving leftovers was to create a sandwich with a little bit of each everything between a dinner roll or two slices of bread. His sandwiches always included slices of leftover turkey. Since I stopped eating meat more than 40 years ago, I thought it would be fun to make a much kinder/gentler version – a Vegan Thanksgiving Leftover Sandwich. Instead of using turkey, this sandwich includes thin slices of savory herbed tofu. (See the full recipe below)

What to use in a Thanksgiving Leftover Sandwich

Here’s what I like to do. If I’m making a sandwich just for myself, I’ll take a small amount of everything I prefer heated, put it all on one plate and microwave it until it’s warm. In the meantime I’ll gather some crispy lettuce, mayo, cranberry sauce and any other chilled condiment I want on my sandwich. If I have leftover bread or dinner rolls, I might heat or toast it before assembling my sandwich.

For my Thanksgiving leftover sandwich, I added a slice of savory herbed tofu, a generous spoonful of vegan mushroom gravy, a scoop of homemade vegan stuffing, cranberry orange sauce, some crispy lettuce & a bit of vegan mayo all layered inside a leftover dinner roll. It was so delish!

Keep it easy on yourself! Here’s a fun and simple way to feed your family or guests the day after Thanksgiving.

Gather up all those leftovers and arrange them on the dinner table or kitchen counter. Reheat dishes that you typically serve hot. Grab condiments like gravy, cranberry sauce or relish, vegan mayo, mustard . . . whatever. Salt & pepper. Put together a basket of pre-sliced dinner rolls or bread. Set out a stack of plates and napkins & call in the gang! They’ll love getting creative assembling their sandwiches.

  • Tofu or seitan slices
  • Vegan stuffing or dressing
  • Mashed potatoes
  • Green bean casserole
  • Gravy
  • Cranberry sauce or relish
  • Yams or sweet potatoes
  • Any other leftovers!

How to Cook Savory Herbed Tofu Slices

This recipe is as easy as it gets! All you need is a package of firm tofu and a few basic seasonings and you’ll have everything you need to make delicious savory meaty slices to accompany all of your Thanksgiving side dishes and to enjoy in a “leftover sandwich” the next day!

Here is what you’ll need to prepare this recipe:

🥕Equipment
  • Large heavy bottom skillet (I prefer cast iron)
  • Tofu press or two cutting boards and a couple heavy cans for weights
  • Chef’s knife
  • Measuring spoons
  • Metal spatula or tongs
🥕Ingredients
  • Tofu – firm or extra firm
  • Olive oil
  • Sage – dried
  • Oregano – dried
  • Rosemary – dried
  • Garlic powder – dried
  • Salt
  • Pepper

Simple Savory Herbed Tofu

Prep Time: 20 minutes
Cook Time: 10 minutes

Simple Savory Herbed Tofu 🌱 An easy and delicious vegan recipe for preparing beautifully seasoned seared tofu as an entree or addition to any meal.

Equipment

  • Large heavy bottom skillet (I prefer cast iron)
  • Tofu press or two cutting boards and a couple heavy cans for weights
  • Chef's knife
  • Measuring spoons
  • Metal spatula or tongs

Ingredients

  • 14 oz Tofu firm or extra firm – drained
  • 2 Tbsp Olive oil
  • 1 tsp Sage dried
  • 1 tsp Oregano dried
  • 1 tsp Rosemary dried
  • 1/2 tsp Garlic powder dried
  • 1/2 tsp Salt add more if needed
  • 1/2 tsp Pepper

Instructions

  • Drain tofu and slice into 1/6" – 1/4"thick slices
  • Place tofu on cutting board.
  • Combine dry herbs and seasonings.
  • Rub seasonings onto both sides of tofu slices.
  • Pour 2 tbsp olive oil into skillet. Place over med-high heat.
  • Arrange tofu slices in skillet. Sear both sides in hot pan until lightly browned.
  • Remove from heat.
  • Serve with your favorite side dishes.

Notes

🥕This recipe can be adjusted with any herbs or seasonings you prefer. In a pinch, I like to use my favorite all-purpose seasoning – Spike. 
🥕Variations for seasoned herb rubs
A combination of dried seasonings and fresh herbs can add a lot of flavor to tofu. Here are a few of my favorites for different dishes:
  • Cumin, chile lime seasoning – perfect with Mexican or Southwestern-inspired dishes
  • Curry powder – adds an exotic flavor to any Thai or Indian recipe
  • Smoked paprika, cayenne, chile powder – ideal for a barbecue flavor
  • Sage, rosemary, thyme, sweet basil – holiday all the way!
🥕For salads, I like to cube the tofu into dice-sized pieces. Prepare and cook just like slices
